Since 1995, Cups has been roasting its own coffee at its warehouse in Ridgeland, Miss. Cups uses 100 percent high-end Arabica beans and prides itself on knowing where in the world they come from. In addition, Cups donates generously to Coffee Kids, a nonprofit organization that improves the lives of coffee farmers in the developing world and helps educate their children.
Production and distribution manager Shawn Rogers, who has been with Cups since 1997, has over ten years of experience as a coffee roaster. Certified as a Master Level Roaster, he is to coffee roasting what a sommelier is to wine. He understands the multitude of factors that contribute to an excellent cup of coffee, from the soil in which the coffee is grown to the speed and heat with which he roasts it. Some beans are nutty or sweet; others are earthy or floral. Cups sources Arabica coffee beans from around the world, from countries such as Costa Rica and Kenya, each with a unique flavor and history.
Shawn is also responsible for flavoring the coffees that Cups stores regularly rotate through their daily offerings. He selects flavored oils such as crème brulee and hazelnut and adds them to a tumble mixer, which adds a hint of flavor to the porous beans.
